Milk Based Products: In milk-based formulations, Calcium Carbonate serves as a buffer, neutralizing acidic environments. There are two primary methods for incorporating it:

  • Pre-Neutralization: This efficient method involves mixing Calcium Carbonate with another dry acidic ingredient. This liberates CO2, leaving behind elemental Calcium. Alternatively, it can be combined with Calcium Chloride to achieve prebuffering and yield combined elemental Calcium at a neutral pH.

CaCO3 + 2(CaCl) + H2O = 2(CaO) + CaCl2 + CO2

  • Targeted Neutralization: This approach involves adding precise amounts of Calcium Carbonate to shift the pH from acidic to neutral while preserving the overall acidity of the product.

CaCO3 + 2HCl → CaCl2 + CO2 + H2O

Dairy Replacement Products: In non-dairy milk applications like Almond, Oat, or Cashew milk, Calcium Carbonate plays a crucial role in remineralization. Here's how it's done:

  • Calcium Carbonate is added to the RO-DI water stream, benefiting from the acidic nature of purified water. This process leaves the water neutral pH and enriched with Calcium.
  • Particle size is crucial for dissolution times, with particles of 6μm or less being ideal. Focus is placed on insoluble and trace metal content rather than purity.

Dissolution rates remain consistent across particle sizes of 6μm or smaller. However, the primary focus should shift towards assessing insoluble and trace metal content. Here's a breakdown of dissolution times at pH 5.5 based on varying particle sizes:

2 μm: 4 seconds
4 μm: 6 seconds
6 μm: 7 seconds
